Evolution of tradition

The history of the territory and that of the raw ingredients accompany creative execution: every dish is a tale of Piedmont that renews itself and surprises.

Mykyta's dishes are born from the encounter between local ingredients, seasonality, and gastronomic memory, interpreted with delicacy.

At Radici, tradition is not immutable: it transforms, evolves, and takes shape in the execution of every recipe.

territory

Langhe, Monferrato, Roero - UNESCO World Heritage Site - lands of vineyards, forests, villages, farmsteads and markets.

Our recipes carry the history of these places, flavors handed down through generations, ready to dialogue with the present.

Alba White Truffle, Tonda Gentile Hazelnut, Barolo & Barbaresco: the territory becomes an invisible and essential ingredient in every dish, enhancing the land and the memory.

Ingredients & raw materials

No ingredient is accidental.

Quality meats and seafood accompany the wild herbs and flowers gathered on our estate, while mushrooms and vegetables come from local researchers and farmers.

Every ingredient is used in its entirety: even the scraps are protagonists in Mykyta's dishes, accompanying the premium cuts.

Technique & inspiration

Mykyta's cuisine is a quest for balance and harmony. His creations stem from meticulous thought: aromas, textures, and cooking methods engage in a dialogue to bring memorable tasting experiences to life.

Leavening and fermentation also become tools of expression, capable of enhancing the raw ingredients' flavors, textures, and characteristics.

Chance is not an option: every single gesture reflects creativity and vision, transforming Piedmontese tradition into contemporary and digestible, surprising and elegant dishes.
